This Sunshine Dip, made with sunflower seeds, is not only creamy and delicious but also super versatile! It can be served as a snack or appetizer or enjoyed as a salad dressing!

1-2 cups sunflower seeds (soaked overnight or for at least 1 hour)
1/2 cup raisins (soaked overnight or for at least 1 hour)
freshly ground pepper
1-2 tsp curry powder
pinch salt
a splash of olive oil
a splash of water
parsley
juice of 1/2 a lemon

Add sunflower seeds and raisins into the blender. Measure out and add in the curry powder and a pinch of salt. Add a splash of olive oil. Note, sunflower seeds already have a lot of oil, so just a touch of olive oil will do. Add a splash of water. Blend all together until the sunflower seeds are completely smooth.

Grind the pepper, adding a pinch or two into the blender. Add the parsley and the juice from half a lemon. Briefly blend once more so the parsley stays in small pieces.

Spoon into a bowl and serve. Enjoy this nutritious snack with raw vegetables or spread over crackers.

To make into a salad dressing, combine a few spoonfuls of the dip with olive oil and water, blending until smooth.
