Raw Protein Bars2 min
These protein bars are the perfect go-to snack when you are on the move, as well as an awesome post-yoga snack! This recipe is totally raw and does not require an oven. I created these beauty bars as an alternative for my clients that like to eat pre-packaged energy bars. Full of protein, as well as skin-plumping omega fats, fiber, antioxidants, minerals and protein.
2 ½ cup pecans
½ cup almonds, soaked overnight and rinsed very well, and dried as much as possible
½ tsp. sea salt
1 tsp. Vanilla extract
1 cup pitted dried dates
3 Tbs. coconut nectar
Blend the pecans and almonds alone in the food processor until completely broken down, with no chunks.
Add the salt, cinnamon, nutmeg, vanilla extract and dates and process again. Add the coconut nectar last and process one last time.
Line a glass baking tray with saran wrap hanging over the edges. Press bars firmly into the baking tray to make a nice, even shape.
Lift the saran wrap and place bars on a cutting board to cut evenly and move into containers.
