This summer side is both easy and delicious, making it the perfect addition to any evening meal!
When shopping for the asparagus, be sure to choose a bunch that looks healthy and smells deliciously fresh.
Preheat the oven to 425 degrees. Begin by prepping the asparagus, chopping off the thicker bottom ends as they can sometimes be a bit bitter.
If you notice some of the asparagus has extra stalk towards the bottom, you can easily trim them away with a vegetable peeler.
Place the asparagus into a glass baking dish and drizzle with olive oil. Sprinkle salt and freshly ground pepper over the asparagus and mix well with your hands.
Roast for about 10-15 minutes in the oven, then enjoy! This side dish will easily complement almost any meal!
